Granola Goodness…

I love breakfast. It’s my favourite meal of the day. Around Christmas time I decided to mash up the many Granola recipes I have seen before and I kind of came up with this. I was keen to make a grain free granola. Give it a whirl. I enjoy mine with yoghurt and it tastes great.

What you need;

3 big spoons coconut oil

3 squeezes of agave nectar

1 big spoon vanilla extract

½ small spoon almond extract

2 small spoons ground cinnamon

1 small spoon ground nutmeg

1 cup flakes almonds

1 cup chopped pecans

Handful of pumpkin seeds

Handful of chopped hazelnuts

Handful of mixed seeds

2 big spoons of mixed flax/chia blend/maca powder

1 cup of mixed dried fruit

How you do it;

* Heat oven to 150c.

* Lightly grease baking tray with a little coconut oil.

* Slowly melt coconut oil and honey. Off the heat, add the vanilla and almond.

* Throw all the dry ingredients into a bowl, then mix in the coconut oil mixture.

* Spread the mix evenly on baking tray. Bake for 10 mins.

* Stir then bake again for another 10 mins.
